Mint Rice/Pudhina Rice

Mint Rice/Pudhina Rice


Ingredients:

Rice                         –  1 cup
mustard seeds          – 1 tsp
chana dhal               –  11/2 tbsp
peanuts                    –  11/2tbsp
urad dhal                  – 11/2 tbsp
sesame oil                – 3 tbsp


For grinding:

Pudhina/mint           – 1 bunch
greenchillies            – 3-4
ginger                      – 2
garlic                       – 2
salt                           -to taste

 


Method:


  • In a blender grind the ingredients for grinding adding little water.
  • Pressure cook Rice in 2 cups of water and salt.
  • In a pan heat oil and allow mustard seeds to splutter.
  • Follow it with chana dhal,peanuts,urad dhal

  • Once it turns golden add the ground mint paste.

  • Cook until the oil oozes out .

  • Mix the cooked Rice to it .

  • Serve with Raitha/chips or any curry accompaniment.
Serves 2-4
