Bombay meal rice

Bombay meal rice



Ingredients:

Basmathi rice                        –       1 cup
Yellow moong dal                –        1/4 cup
carrot                                     –        1  cup diced
peas                                       –         3/4 cup
onion sliced                           –         3/4 cup
tomato sliced                          –         1/2 cup
ginger                                      –         1 tbsp chopped
green chillies                           –         4
cinnamon stick                         –        1 inch
coconut milk                            –         1 cup
salt                                            –         to taste
water                                         –         2 cups
cilantro                                      –         to garnish
butter                                         –         1 tbsp

Method:

  • In a cooker heat butter and add the cinnamon stick and chopped ginger
  • Fry green chillies and onion until its transparent
  • Now add carrots,peas and tomato with desired salt .
  • Simultaneously wash rice and moong dhal well
  • add both to the cooker  and after 2 minutes add 1 cup of coconut milk,2 cups of water
  • Now close the cooker and pressure cook for one whistle
  • Open the cooker and garnish with chopped cilantro
  • Serve with coriander chutney or any raitha
  • Its a healthy kids delight recipe
