Kadai Chicken

Ingredients:
Chicken                     – 11/4 kg
Onion                      – 3 large finely chopped
Tomato                     – 4 large pureed
ginger garlic paste              – 11/2 tbsp
coriander powder              -1 tbsp
chilli powder                  – 2 tsp
garam masala                 – 1 tsp
green chillies                  – 6
kasoori methi/dried fenugreek leaves- 2 tbsp
turmeric                      – 1/4 tsp
salt                         – to taste
For grinding
Coriander seeds                 – 2 tbsp
red chillies                         – 8
Method:

In a pan dry roast coriander seeds and red chillies until nice aroma comes out of it

 Allow it to cool off and blend it into fine powder

In a kadai heat oil and add the ground powder and fry until a nice aroma comes out.

add finely chopped onion

After it turns brown add the ginger garlic paste

After the raw flavour goes off add the salt,turmeric,chilli powder, coriander powder,garam masala and mix well
-
After the masala blends well add the chicken,little more salt and chopped green chillies
-
fry until the chicken turns light brown
- Now add the purred tomatoes
- After 2 minutes add the crushed kasoori methi and cover it with a lid
- Cook until chicken is done and garnish with chopped cilantro
- Serve with cumin rice or any indian bread
