Kathirikai kadayal is a interesting dish from Tamilnadu cuisine wnere brinjal/kathirkai is mashed thoroughly after being  cooked well with onion ,tomato and spices and is tempered with typical South Indian tempering ingredients.
Ingredients:
kathirikkai     – 4
tomato            -2 medium size
onion              -1
green chilli     -3
cumin powder -1/4 tsp
salt                  -to taste
for tempering
oil                 -1tbsp
mustard seeds-1/2tsp
cumin seed    -1/4 tsp
curry leaves    -few
red chilli         -1
Preparation time  :5 min
Cooking Time    :15-20 min
Method
- Cut the vegetables in small size and put in the pressure cooker add right amount of salt , 1/2 cup water and cook for 3 whistle.

Once pressure goes off open the lid and mash with a beater or spatula.
