Tindoora fry/kovaikkai varuval

Ingredients:
Tindoora/kovaikkai         – 400g
Onion                               -1/4 cup finely chopped
ginger garlic paste            -1tsp
curry leaves                      -few
mustard seeds                   -1/4tsp
urad dhal                          -1/2 tsp
cumin seeds                     -1/4 tsp
green chillies                   -5-6
turmeric                            -1/8 tsp
turmeric                            -1/8 tsp
coriander powder             -1 tsp
salt                                    -to taste
oil                                     -1 tbsp
oil                                     -1 tbsp

Method:
-
In a pan heat oil and allow mustard seeds to splutter.

Follow it with urad dhal,cumin seeds,green chillies,turmericand curryleaves.

Add the chopped onion and fry until it turns transparent.

Add the  ginger garlic paste and fry until the raw flavour goes off.

Put salt and coriander powder and mix well.
-
Add the finely chopped tindoora/kovaikkai .
- and keep frying until well done.

Serve as a side with Rice
