Baingan Bartha
Ingredients:
eggplant               -1
onion                   -2
tomato                 -2
 peas                    -1 cup
coriander powder -11/2 tsp
cumin powder     -1/2 tsp
chilli powder        -1-11/2 tsp
garam masala       -1/2 tsp
salt                       -to taste
turmeric               -1/8 tsp
cumin seeds         -1/4 tsp
garlic                   -2 cloves
ginger                 -1/2 inch
cilantro              -to garnish
oil                       -2 tsp

cilantro              -to garnish
oil                       -2 tsp
 Method:

With the fork puncture the eggplant all around and brush with oil.

Preheat oven to 375 f and cook for 35 minutes turning in between.

You can also show over the flame on a stove equally on all sides.

Once the eggplant is cooked peel the skin and mash the eggplant thorougly.

In a kadai heat oil and allow cumin seeds to splutter.

Add finely chopped onions and fry until golden brown.

Add the shredded ginger and garlic and fry until the raw flavor goes off.

Add the tomatoes and cook until mushy.

Follow it with salt,chilli powder,cumin powder,coriander powder ,turmeric powder and mix well.

Add little water and cook for few minutes .now add the mashed eggplant to it and mix well.

Put the peas with little water and cook for five minutes.

Garnish with cilantro.

Squeeze little lemon juice and finely chopped onions(optional)

Serve with any Indian Bread
