Spicy ‘n’Creamy Veggie Pasta
Ingredients:
Rotini Pasta      -2 cups
carrot           -1
red bell pepper   -1/4 cup chopped
green bell pepper -1/4 cup chopped
green peas       -1/4 cup
butter          -1 tbsp
half n half       -1/2 cup
mozarella cheese -1/4 cup
salt             -to taste
For Sauce: frying & grinding:
onion          -1 cup cubed
tomato         -2 cups chopped
mint leaves      -few
green chili      -1
coriander powder-1/2 tsp
chili powder     -1/4 tsp
coriander powder-1/2 tsp
chili powder     -1/4 tsp
cinnamon       -1/4 inch
bay leaf        – 1
clove          -2
bay leaf        – 1
clove          -2
garlic clove      -2
oil             -1 tsp
oil             -1 tsp
Method:
- Pasta:
- In a pot boil water and little salt and cook 2 cups of pasta until soft(cook per instructions as in pasta box)
- Drain the pasta and keep it aside.
- For Sauce:
- In a pan heat oil add cinnamon, cloves, bay leaves,ginger, garlic and green chilies.
- Fry onions until transparent.
- Add few mint leaves.
- Add cubed tomatoes.
- After 2 minutes add coriander powder, chili powder.
- Cook until mushy .
- Allow it to cool and blend it into a puree .
- For spicy veggie Pasta:
- In a pan melt butter ,and saute carrot,green bell pepper, red bell pepper,green peas for 4 -5 minutes.
- Add the blend puree and cook until oil oozes out.
- Add 1/2 cup of half and half/whipping cream and cook for a minute.
- Add the cooked pasta and mix well .Switch off the stove
- Sprinkle the mozarella cheese.
- Serve the Spicy’n’creamy Veggie Pasta hot.

- For spicy veggie Pasta:

- Add the blend puree and cook until oil oozes out.
- Add 1/2 cup of half and half/whipping cream and cook for a minute.
- Add the cooked pasta and mix well .Switch off the stove
- Sprinkle the mozarella cheese.
- Serve the Spicy’n’creamy Veggie Pasta hot.
