Soya chunks biriyani

Ingredients:

Basmathi rice                  -11/2 cup
soya chunks                    -11/2 cup
cinnamon                           -1
clove                                -2
star anise                          -1
bay leaf                            -1 small
yogurt                               -2 tbsp
chili powder                      -1/2 tsp
oil                                    – 1 tbsp

for grinding:

green chillies                   -3
cilantro                            -1/4 cup chopped
mint leaves                       -1/4 cup tightly packed
coriander seeds                 -1 tsp
cumin seeds                      -1/2 tsp
fennel seeds                       -1/4 tsp
garam masala                    -1/4 tsp
ginger garlic paste              -2 tsp



Method:

  • Boil water in a pan and cook soya chunks for 5 minutes with desired salt.

  • Drain the water and squeeze the soya chunks
  • Grind the ingredients in a mixer into a smooth paste.

  • Marinade the soya chunks with  ground masala ,yogurt with adequate salt for at least 1 hour.
  • Soak rice in water for 15 minutes.Drain it off.
  • In a pressure heat oil and temper with cinnamon, cloves, star anise and bay leaves.

  • Add the sliced onion and fry until transparent.

  • Add the finely chopped  tomatoes to it and cook until it turns soft.
  • Now put the marinated soya chunks and cook until the raw flavor of the masala goes off.
  • Add required  salt and chili powder

  • Pour  2 3/4 cup of water and when it starts boiling add the rice to it .

  • Pressure cook for 1 whistle.Once the pressure goes off open and garnish with cilantro.

  • Serve the soya chunks biriyani with raitha of your choice.
