PARMESAN GARLIC BREAD WITH BROCCOLI POTATO SOUP 

When Parmesan garlic bread  is dipped into a bowl of broccoli potato soup its tasty and filling , and   it is healthy option to relish as a  lunch/dinner menu .

PARMESAN GARLIC BREAD

Ingredients: 

Wheat flour – 2 cups(up to 1/2 cup additional if needed to get a soft dough)
Lukewarm water -1 cup 
Mixed herbs(Rosemary, basil,oregano)-3 tsp ( each a tsp) 
Parmesan cheese-1/3 cup 
brown sugar -1/2 tbsp 
Instant dry yeast -1 tbsp 
Garlic powder -1/2 tbsp
 (you can use 6-8 garlic pods finely chopped as a substitute) 
oil – to grease 
salt -to taste

METHOD:

  • In a mixing bowl add instsnt dry yeast, luke warm water and brown sugar.
  • Add in mixed herbs ,garlic powder,salt to taste and parmesan cheese and give it a a good mix.
  • Start adding wheat flour little by little kneading it simultaneously
  • Knead it into a nice soft dough ,rest it to proof and double the size for an hour.


Broccoli Potato soup

Ingredients:

broccoli -1 bunch(1/4 kg)
Potato -1 medium
butter -1 tbsp
garlic cloves -3
onion – 1 finely chopped
Wheat flour -1 tbsp
vegetable stock -2 cup
milk -1 1/2cup
salt -to taste
pepper -to taste

Broccoli potato soup is a very healthy nutritious soup which becomes itself a complete meal when served with Garlic bread

Ingredients:

broccoli                  -1  bunch

potato          -1 medium cut into cubes
butter                     -1 tbsp
garlic cloves           -3
onion                     -1/2 finely chopped
all purpose flour      -1 tbsp
vegetable stock      -2 lb
milk                       -1 1/2cup
salt                         -to taste
pepper                   -to taste

Method:

  • In a pan melt butter and fry onions and chopped garlic.           
  • When it turns transparent add the broccoli florets and cubed  potato and salt. Fry for 3 minutes.
  • Then add the wheat flour to it and cook until it becomes sandy(make sure no lumps is formed)
  • Pour in 11/2 lb. of  vegetable stock. Cover and cook until broccoli is soft.
                                
  • Switch off the flame and let it cool off. Blend it using a hand blender/food processor.
                          
  • Now pour the blended puree back again into the pot and add milk and remaining stock.Cook for another few minutes and drizzle desired pepper powder.              
  • Serve hot with Broccoli potato soup is a very healthy nutritious soup which becomes itself a complete meal when served with Garlic bread
