HEALTHY LUNCH WITH CHICKPEAS

A lunch bowl with protein rich chickpeas is super healthy and  delicious .Here we have shared two recipes of chickpeas  a salad and a soup. It’s more like having a balanced diet for your lunch.

CHICKPEA SALAD:

INGREDIENTS:

cooked chickpeas  – 1 cup
Cucumber -1/2 cup diced
onion   – 1 diced 
tomato -1 diced
crumbled paneer-1/2 cup 


For Salad dressing:

olive oil -2 -3 tbsp
salt -to taste
pepper -to taste
chaat masala-1/4tsp
lemon juice- 11/2 tsp


Method:

  • In a bowl mix all the ingredients listed under for salad dressing together.
  • In a serving bowl add cooked chickpeas, onion ,tomato ,cucumber and crumbled paneer.
  • Drizzle in the  prepared salad dressing into the salad bowl and mix well.
  • Serve the salad
  • You can also put it  in with your chapathi/Tortilla and roll it as a wrap

CHICKPEA SOUP

INGREDIENTS:

Cooked chickpeas – 1 cup
onion- 1finely chopped
tomato -1 finely chopped
garlic cloves – 1 finely chopped
carrots -1 finely diced
cucumber -1/2 cup diced
olive oil -1 tbsp
salt-to taste
pepper – to taste
cumin powder – 1/2 tsp
 

METHOD:

  • In a pan heat oil and add finely chopped garlic and sauté until it turns translucent.
  • then add in chopped onions and the carrots and sauté until the onions turns translucent. 
  • Put in the finely chopped tomatoes and cook until it turns mushy.
  • Add in the cucumber/zucchini , salt ,pepper and cumin powder to it.
  • After a minute add cooked chickpeas and a cup of water from cooked chickpeas / vegetable stock
  • Cover and cook it in simmer for 10 minutes.
  • Garnish with cilantro and pepper powder
  • Serve hot
