PALAK SOUP

INGREDIENTS:

  • Palak / spinach – 1 bunch
  • Water -2 cups
  • Pepper corns -1 tsp
  • Cumin seeds -1/4 tsp
  • garlic cloves -3
  • shallots -5
  • almonds -10
  • salt – to taste
  • Cream -1/2 cup(optional)

METHOD:

  • To a kadai add 2 cups of water and throw in pepper corns, cumin seeds, garlic cloves, shallots and almonds and let it come to a nice boil
  • Meanwhile wash the palak thoroughly and roughly chop it
  • Once the water comes to a boil, add chopped palak , adequate salt and make sure palak is immersed.
  • Switch off the flame and cover it for 5 minutes
  • After 5 minutes the spinach get shrink, strain off the palak with other ingredients and transfer it into a mixer jar
  • Let the spinach stock be in the kadai itself
  • Blend the strained palak into a fine puree
  • Add the blend puree into the stock , mix well and let it come to a boil
  • Add cream and switch of the flame. Cream is entirely optional
  • Serve Hot and sip slurp the yummy soup
