Healthy Teriyaki Fried Rice Recipe

This recipe is a perfect example of a healthy lunchbox meal. It is packed with nutrients and flavor, and it is sure to keep you satisfied all afternoon.

Here’s what you’ll need:

  • 2 cups brown rice
  • 6 cups water
  • Salt
  • 3 tbsp olive oil
  • 1 tsp chopped ginger
  • 1 tsp garlic, chopped
  • 1/4 cup corn
  • 1/4 cup diced carrots
  • 1/2 cup small broccoli florets
  • 1/4 cup peas
  • 1/4 cup chopped cabbage
  • 1/4 cup bell pepper
  • 100 grams tofu, cut into small cubes
  • 2 tbsp teriyaki sauce
  • 1/2 cup teriyaki sauce

Instructions:

  1. Cook the brown rice according to package instructions. Once cooked, set aside.
  2. Heat olive oil in a pan over medium heat. Add ginger and garlic and cook until fragrant, about 30 seconds.
  3. Add onion and cook until translucent, about 5 minutes.
  4. Add corn, carrots, broccoli, peas and cook for 5 minutes.
  5. Add cabbage and bell pepper and cook for an additional 2 minutes. Season with salt and pepper.
  6. In a separate bowl, toss tofu with 2 tbsp teriyaki sauce.
  7. Add the remaining teriyaki sauce and the cooked brown rice to the pan with the vegetables. Stir fry for 3 minutes.
  8. Add the teriyaki tofu and stir fry for an additional minute.
  9. Divide the teriyaki fried rice into two containers. You can enjoy it immediately or store it in the refrigerator for up to 3 days.

This recipe is a great way to get your whole grains, protein, and vegetables all in one dish. It is also a great way to use up leftover cooked rice.

Here are some additional tips:

  • If you don’t have teriyaki sauce, you can make your own by simmering soy sauce, mirin, sugar, and ginger together.
  • You can also add other vegetables to this recipe, such as snap peas, mushrooms, or water chestnuts.
  • If you are a vegetarian, you can omit the tofu or replace it with another protein source, such as tempeh or lentils.
