  • ½ cup Toor Dal
  • 3 cups Mixed Vegetables (carrot, beans, pumpkin, brinjal, drumstick, cauliflower)

  • Tomatoes

  • Curry Leaves
  • Cilantro
  • 2 tbsp Sesame Oil

Tempering:

Main Flavor:

  • 5 tsp Sambar Powder (preferably homemade)
  • Salt to taste
  • 4 cups Water

For Garnish:

  • Ghee
  • Fresh Cilantro

👩‍🍳 Step-by-Step Method

1. Soaking

Wash rice and dal thoroughly. Add 1 cup water and soak for at least 1 hour.

2. Sauté Mode

Turn on Instant Pot → Sauté Mode → High
Add sesame oil → mustard seeds → let them splutter

Add urad dal, cumin seeds, peppercorns, fenugreek, asafoetida, turmeric, and shallots.

3. Add Aromatics

Add curry leaves and green chilli → sauté well

4. Add Vegetables

Add all chopped vegetables and salt → sauté for a few minutes

5. Add Tomatoes & Masala

Add tomatoes and cilantro → mix well
Add sambar powder and sauté

6. Add Water

Pour 3 cups water → bring to boil

7. Add Rice & Dal

Add soaked rice and dal with water → total 4 cups liquid
Adjust salt

8. Pressure Cook

Cancel sauté → switch to Rice Mode (White Rice) → 12 minutes

9. Final Touch

Once done → open lid
Garnish with cilantro and drizzle generous ghee
