Finger Millet Idly Recipe

Finger millet idli is a healthy and delicious South Indian breakfast dish made with finger millet, rice, and lentils. It is soft, spongy, and has a unique flavor.

Ingredients:

  • 1 cup finger millet (ragi)
  • 1 cup idly rice
  • 1 teaspoon fenugreek seeds
  • 2 cups water
  • 1/2 cup black urad dal (split black gram)
  • Salt to taste

Instructions:

  1. Wash the finger millet, idly rice, and fenugreek seeds thoroughly. Soak them together in 2 cups of water for at least 5 hours.
  2. Wash the black urad dal and soak it in a separate cup of water for at least 5 hours.
  3. After soaking, grind the finger millet and idly rice together in a grinder until you get a smooth batter.
  4. Grind the soaked black urad dal separately until you get a smooth batter.
  5. Mix the finger millet and idly rice batter with the black urad dal batter. Add salt to taste and mix well using your hands. Mixing with hands helps in better fermentation and texture.
  6. Cover the batter and let it ferment overnight.
  7. In the morning, brush oil on your idly plates. Pour the batter into the plates and steam it for 10 minutes.
  8. Your ragi idli is ready! Serve it hot.

Tips:

  • You can use a normal white lentil instead of black urad dal.
  • The batter should be smooth but not too thin.
  • If the batter is too thick, add a little water to adjust the consistency.
  • You can also add chopped vegetables to the batter for extra flavor and nutrition.
  • Finger millet is rich in calcium, fiber, and iron. It also aids in digestion, controls blood sugar, and boosts energy levels.
