Ragi Idli/Finger millet Idli


Ragi idli is a South Indian breakfast dish made from fermented ragi (finger millet) batter, steamed to fluffy perfection, rich in nutrients and gluten-free.

Ingredients:

  • Ragi / Finger millet – 1 cup
  • Idli Rice – 1 cup
  • Black urad dhal -1/2 cup
  • Feungreek seeds – 1 tsp
  • Salt – to taste

Method:

  • Take Ragi/finger millet ,idli rice and fenugreek seeds in a bowl and wash it thoroughly
  • Add 2 cups of water and soak it for at least 5 hours
  • Take black urad dhal and wash it thoroughly. you can substitute it with white lentils too{urad dhal}
  • Soak it in a cup of water for at least 5 hours
  • Grind soaked Ragi-idli rice into a nice smooth batter
  • Then grind soaked black urad dhal into a buttery consistency.
  • Mix both batter together by adding adequate salt and using hands
  • Let it ferment over night
  • Now grease idli plates with oil and steam cook in an idli pot for just 10 minutes
  • Super soft and spongy Ragi idli ready
