Ingredients:
- 1 cup of ragi flour (finger millet)
- Water (as needed to moisten the flour)
- 2 tbsp palm jaggery
- 2 tbsp shredded coconut
- 1 heaped tsp of ghee
- Optional: Roasted sesame seeds for added crunch
Instructions:
- Prepare the Ragi Flour:
- Take a cup of ragi flour in a bowl.
- Gradually sprinkle water, little by little, and mix the flour until it forms a crumbly texture. You want the ragi flour to hold together when pressed and break apart when you apply gentle pressure.
- Set Up the Kettle:
- Add 1 cup of water to the kettle.
- Place the steamer on top and spread a muslin cloth over it.
- Transfer the moistened ragi flour to the cloth, wrap it, and cover the kettle with the lid.
- Steam the Puttu:
- Let the ragi puttu steam for exactly 5 minutes in the kettle. Once done, carefully remove the steamed ragi flour and transfer it to a bowl.
- Add Flavor and Goodness:
- While the flour is still hot, mix in 2 tbsp of palm jaggery. Palm jaggery adds a natural sweetness and is a great alternative to sugar.
- Add 2 tbsp of shredded coconut for flavor and texture. Coconut is rich in fiber and good fats.
- Lastly, stir in 1 heaped tsp of ghee, which not only adds richness but also helps with digestion.
- Optional:
- If you like a bit of crunch, add some roasted sesame seeds. Sesame seeds bring a subtle nutty flavor and are an excellent source of calcium.
- Shape the Puttu:
- Quickly shape the puttu into small balls or any desired shape while it’s still warm. It’s essential to do this step immediately after steaming to get that perfect soft texture.
