Healthy Ragi Choco Cake – A Guilt-Free Delight

For this deliciously healthy cake, you’ll need:

  • 3/4 cup of ragi flour – The star ingredient, adding a wholesome touch.
  • 3/4 cup of wheat flour – For a little extra structure and nutrition.
  • 1/2 cup of cocoa powder – The key to that rich chocolate flavor.
  • 2.5 teaspoons of baking powder – To give your cake the perfect rise.
  • A pinch of salt – To balance the flavors.
  • 3/4 cup of water
  • 1 teaspoon of coffee powder – Enhances the chocolate flavor.
  • 3/4 cup of jaggery or sugar – Choose your sweetener based on preference.
  • 6 tablespoons of melted butter – For moisture and richness.
  • 1/3 cup of curd – Adds moisture and helps in binding the batter.

Method

Step 1: Preparing the Dry Ingredients
Start by mixing the dry ingredients. In a large bowl, combine 3/4 cup of ragi flour, 3/4 cup of wheat flour, 1/2 cup of cocoa powder, 2.5 teaspoons of baking powder, and a pinch of salt. Stir everything together until well combined.

Step 2: Preparing the Wet Ingredients
Next, move on to the wet ingredients. In a pot, bring 3/4 cup of water to a boil and add a teaspoon of coffee powder. Once the coffee is brewed, reduce the heat and stir in 3/4 cup of jaggery or sugar until fully dissolved. Add 6 tablespoons of melted butter to this mixture and stir until well combined. Let it cool slightly, then add 1/3 cup of curd, mixing well to create a smooth, homogenous mixture.

Step 3: Combining Wet and Dry Ingredients
Slowly add the wet mixture to the dry ingredients, stirring gently with a spatula. Mix in the same direction to avoid over-mixing, until you get a smooth, well-formed batter.

Step 4: Baking the Cake
Prepare a 10-inch round baking pan by greasing it with oil or butter. Pour the cake batter into the pan, spreading it evenly. For an extra touch of indulgence, you can sprinkle some chocolate chips on top.

Preheat your oven to 180°C (350°F) and bake the cake for about 25 to 28 minutes. To check if it’s done, insert a toothpick into the center—if it comes out clean, your cake is ready. Let the cake cool completely before slicing and serving.
