Jackfruit, also known as kathal, has a meaty texture that absorbs flavors beautifully, making it an excellent plant-based substitute for meat. This biryani is packed with rich spices, fragrant basmati rice, and tender jackfruit for an authentic taste.

Ingredients:
- 300g baby jackfruit (cubed)
- 2 cups basmati rice (soaked for 30 minutes)
- 3 tbsp oil
- 1.5 tbsp biryani masala
- 2 green chilies (chopped)
- ½ cup mint leaves (chopped)
- ½ cup cilantro (chopped)
- 2 onions (sliced)
- 1 tbsp ginger garlic paste
- 1 tomato (sliced)
- ½ cup yogurt
- 1 tsp chili powder
- 4 cups water
- Salt & turmeric to taste
Instructions:
- Boil jackfruit in salted water with turmeric for 15 minutes until soft. Strain and set aside.
- In a heavy-bottomed pot, heat oil and sauté biryani masala, green chilies, mint, and cilantro.I used my hawkins anodized pot for cooking.
- Add onions and cook until golden. Stir in ginger garlic paste.
- Add tomatoes, salt, and chili powder. Cook until the tomatoes soften.
- Add cooked jackfruit and mix well. Pour in yogurt, stir, and cook on low heat for 5 minutes.
- Add 4 cups of water, bring to a boil, and adjust salt and spice.
- Add soaked rice, cover, and cook on low heat until done.
- Serve hot and enjoy with raita!
