👩‍🍳 How to Make Crab Corn Chowder

Step 1: Cook the Crab

Take eight crab legs from a medium-sized crab and place them in a pot with approximately two cups of water.

Add adequate salt, cover and cook for around 10 minutes, or until the crab meat is completely cooked.

The crab shell should turn a beautiful orange color when cooked.

Drain the cooking water and allow the crab legs to cool enough to handle.

Remove the crab meat from the legs and keep it aside.

Tip: If you already have cooked crab meat, you can skip this entire step.

Step 2: Sauté the Onion

Heat a kadai or heavy-bottomed pan and add one tablespoon of olive oil.

Add the finely chopped onion and sauté until it becomes translucent.

This creates the aromatic base for the chowder.

Step 3: Add the Vegetables

Add ½ cup chopped carrots and sauté well.

If you have celery available, you can add some at this stage. Celery adds a classic aromatic flavor to chowder.

Next, add one chopped potato.

The potato is particularly important in this recipe because it contributes significantly to the thick and hearty consistency of the finished soup.

Sauté the vegetables well.

Step 4: Add Sweet Corn

Add ½ cup corn kernels and sauté for a few seconds.

Corn is one of the key ingredients in this chowder. Its natural sweetness complements the delicate flavor of crab beautifully.

Season with salt and chilli flakes.

Mix everything thoroughly.

Step 5: Cook the Vegetables

After sautéing for another two to three minutes, add approximately one cup of water.

You can substitute the water with chicken stock or vegetable stock for additional flavor.

Cover the kadai and cook until the vegetables become completely soft.

Step 6: Blend Part of the Vegetables

Once the vegetables are cooked, allow them to cool slightly.

Transfer approximately half of the cooked vegetables into a blender.

Blend until you get a smooth puree.

Keep the remaining vegetables in the kadai.

This combination of smooth blended vegetables and whole vegetables gives the chowder both thickness and texture.

Step 7: Add the Vegetable Puree

Add some water to the blended vegetable mixture to create a thinner puree.

Pour this puree back into the kadai.

Mix thoroughly, making sure there are no lumps.

Allow the soup to come to a nice boil.

Step 8: Add Crab Meat

Once the soup reaches a rolling boil, add the cooked crab meat.

Add chopped spring onions as well.

Mix gently and allow the chowder to cook for approximately two minutes, or until it begins boiling again.

Be careful not to overcook the crab at this stage.

Step 9: Add the Cream

Now comes the ingredient that transforms this soup into a luxurious chowder!

Add ½ cup cream and mix gently.

Allow it to heat through without aggressively boiling for too long.

The cream gives the soup its characteristic rich, smooth and velvety texture.

🍞 Serving Suggestion

Serve the Crab Corn Chowder hot in a bowl and pair it with crispy garlic bread.

The creamy soup and crunchy garlic bread make a fantastic combination.

You can garnish the chowder with a little extra spring onion or chilli flakes before serving.

💡 Tips for the Best Crab Corn Chowder

Use fresh crab when possible

Freshly cooked crab gives the soup a wonderful natural seafood flavor.

Don’t skip the potato

The potato plays an important role in creating the thick texture of this chowder.

Blend only half the vegetables

Blending everything would make the soup completely smooth. Keeping some vegetables whole gives the chowder a more interesting texture.

Stock can enhance the flavor

If available, use chicken stock or vegetable stock instead of water.

Add cream towards the end

Adding cream near the end helps preserve its creamy texture and prevents unnecessary prolonged boiling.

Already have cooked crab?

Perfect! Skip the crab-cooking and meat-removal process and start directly with the vegetable base.
