Ridgegourd skinchutney(peerkangaithol chutney)
Ingredients:
Ridge gourd    skin                          –    1
chanadhal                                       –    1 tbsp
urad dhal                                       –       2 tsp
red chillies                                    –         3
tamarind                                       –         1/2 inch
garlic                                             –        2 cloves
shredded coconut                          –         2 tbsp
salt                                                 –       to taste
mustard seeds                                –      1/2 tsp
curry leaves                                    –     few
oil                                                    –     1 tbsp
Method:
-
In a pan heat oil  add mustard seeds and red chillies
-
Now add urad dhal,channa dhal,curry leavesand garlic cloves
-
follow it by tamarind,and chopped ridge gourd skin
-
add little water and cover it with a lid
-
open it and fry in between sprinkling water
-
When the ridge gourd skin is almost done add the shredded coconut
-
after a minute switch off and allow it to cool
-
Now blend it well into a fine paste adding desired amount of water
-
serve with curd rice
