Ridge gourd chutney

Ridgegourd skinchutney(peerkangaithol chutney)

Ingredients:

Ridge gourd    skin                          –    1
chanadhal                                        –     1 tbsp
urad dhal                                        –        2 tsp
red chillies                                     –         3
tamarind                                        –          1/2 inch
garlic                                              –         2 cloves
shredded coconut                           –          2 tbsp
salt                                                  –        to taste
mustard seeds                                 –       1/2 tsp
curry leaves                                     –      few
oil                                                     –      1 tbsp

Method:

  • In a pan heat oil  add mustard seeds and red chillies
  • Now add urad dhal,channa dhal,curry leavesand garlic cloves
  • follow it by tamarind,and chopped ridge gourd skin
  • add little water and cover it with a lid
  • open it and fry in between sprinkling water
  • When the ridge gourd skin is almost done add the shredded coconut
  • after a minute switch off and allow it to cool
Now blend it well into a fine paste adding desired amount of water
  • serve with curd rice
