Mutton Biriyani

Mutton Biriyani

Mutton Biriyani is a Rice delicacy cooked with goat meat and ground spices.The flavors of this mutton biriyani will just keep lingering in your tongue even  hours after you consume it.

Ingredients:

Mutton                   – 1/2 kg
Basmathi rice          – 11/2 cup
Coconut milk thick  – 1 cup
Onion                      -1 medium sliced
Tomato                    -1 medium sliced
cinnamon                 -1′
cloves                      -2
bay leaf                   -1
fennel seeds            -1/4 tsp
star anise                -1/2
Ghee /oil                  – 1 tbsp
salt                           – to taste
turmeric                   – 1/8 tsp

For Grinding

Ginger                                    – 11/2 inch
Garlic                           – 8 cloves
green chillies                 -10
fennel seeds                  -1/2 tsp
coriander  leaves           – few
mint leaves                    -1/2 cup
coriander seeds              -2 tsp
cumin seeds                   -1 tsp
cinnamon                       -1/2 ‘
cloves                            -2
star anise                       -1/2
cardamom                     -1
bay leaf                        -1/2
Preparation time:20 min
Cooking time     :1 hr

Method:

  • In a blender grind the above ingredients for grinding into a fine smooth paste and keep it aside

  • In a cooker heat ghee/oil and temper with cinnamon,cloves,bay leaf,fennel seeds,bay leaf ,star anise.

  • Now fry  the sliced onions until light golden.

  • After it becomes transparent add the sliced tomatoes.

  • After a minute add the mutton .Then when the mutton starts to turn pink and salt and turmeric

  • Mix it well and fry for few seconds now add the ground paste

  • Cook for 3 minutes and add 1/2 cup of water. close the cooker and pressure cook for 6 whistles (increase /decrease the whistles  according to the quality of mutton you use). soak basmathi Rice simultaneously after closing the cooker.

  • Now after the pressure goes off add the coconut milk and 11/4 cup of water and desired salt for rice

  • When it starts boiling,drain the Rice and add to it.

  • Cover the cooker and cook for one whistle and take out off the flame.
  • Once the pressure goes off open it and garnish with chopped cilantro

                                  

  • Stir well and enjoy the yummy biriyani with raitha.
