Vegetable Sauce Pasta

Ingredients

Pasta                       -11/2 cup
Pepper                     -1 tsp
salt                           -to taste
Tomato puree          -1 1/2tbsp
Mascarpone cheese -2 or 3 tbsp
mixed herbs            -few

olive oil                   – 2 tbsp

For Vegetable Sauce:

Onion           -1 medium

Red Pepper   -1
Carrot            -1
Garlic gloves-3-4

Chilli powder-1/2 tsp

Method

  • Chop the veggies listed in vegetable sauce and coarsely grind them.
  • In a pot heat the water add olive oil , salt and cook pasta in it until well done.Strain the pasta.
                 
  • Heat the oil in a big pan over medium heat. Cook coarsely ground vegetables until it becomes soft.

  • Add in the tomato puree and cook for 3 minutes.Add in the required salt, pepper and mixed herbs
  • Add fresh water/ pasta water,  to loosen the sauce.
  • Toss pasta with that sauce.
  • Add mascarpone cheese, mix well and switch off the stove.
  • Pasta is ready to serve.
Serves 3
