Kothu Mutton masala
Ingredients:
Mutton – 200 g
onion – 1/2
Tomato – 1/2
ginger garlic paste- 1 tsp
fennel seeds – 1 tsp
Turmeric – 1/4 tsp
Pudhina/mint – 4 leaves
Cilantro – few
coriander powder – 2 tsp
chilli powder – 11/2 tsp
garam masala – 1 tsp
salt – to taste
For Grinding:
Shredded coconut – 2 tbsp
cashews – 6 whole
Method:

In a pressure cooker , pressure cook mutton with salt,chilli powder,turmeric upto 6 whistles until mutton is tender

Now remove from the cooker and make it into fine spices by chopping it with a spoon(thats why we call it kothu mutton)

Grind the shredded coconut and cashews into a fine paste adding 3tbsp of water

In a pan heat oil and temper with the fennel seeds

Add the ginger garlic paste and fry until the raw flavour goes off

- Now add the onions and fry until it turns transparent
- put the chopped cilantro and pudhina/mint to it
- After a minute add the finely chopped tomatoes
- Add the salt,chilli powder,corianader powder and garam masala
- Mix well until it gets blend and now Put the kothu mutton and saute it well
- After two minutes add the ground masala and desired water and allow it to cook for another 10 minutes or until the gravy thickens
Serve with Rice or Dosa or Idli -
