Cheppankizhangu Masala
Ingredients
onion                                       -1/2
tomato                                     -1 small
ginger ,garlic                            -1 tbsp chopped
chili powder                           -1/2 tsp
cumin powder           -1/2 tsp
coriander powder       -1 tbsp
mustard seeds            -1/4tsp
uradal                        -1/4tsp
cumin seeds              -1/4tsp
fennel seeds               – 1/4 tsp
curry leaves              -few
oil                             -3 tbsp
salt                             – to taste
Method:

Wash and boil the tara root/cheppankizhangu until it gets half cooked.

Peel the skin after its cool off and cut it into slices.

Sprinkle salt over to it and shallow fry in hot oil like in below picture.

In a kadai heat oil and temper with mustard seeds,urad dhal ,cumin seeds,fennel seeds and curry leaves.

Add the crushed ginger &garlic and fry until the raw smell goes off.

Fry onion until light golden
