Badam Chicken

Ingredients:

Chicken                       –   600 g
onion                           –   1 large finely chopped
badam                         –  30 soaked in warm water for 30 minutes
cashews                      – 8-10 whole soaked along with badam
ginger                          – 1 inch
garlic                           –  5 cloves
green chillies              – 5
whole garam              – for tempering
coriander powder       – 1 tbsp
pepper powder           – 1tsp
salt                             – to taste
oil                              – 11/2 tbsp

Method:

  • Grind ginger garlic and green chillies into paste and keep it aside
  • Grind the badam and cashews into a fine paste and keep it aside
  • In a kadai heat oil and temper with whole garam and add onions

  • Once the onion turns golden add the gingergarlicgreen chilli paste

  • After the raw flavour goes off  put the coriander and pepper powder

  • add the badamcashew paste (keep stirring frequently without the masala getting stuck)

  • cook it until oil oozes out Add the chicken and salt

  • Mix it well and add 11/2 cups of water

  • cover it with a lid and cook it on a low flame until the chicken is done.(stir in frequently)

  • Add the fresh cream and cook for another 2 minutes

  • Garnish with cilantro

  • Serve with Riec,naan or chapathi
