Ethiopian Berbere spice mix

Ingredients:
Whole cumin          – 2 tsp

Red pepper flakes   – 1-2 tsp

Cardamom seeds    – 1 tsp

Fenugreek seeds     – 1 tsp
Whole peppercorns -8

Allspice berries      – 6
Â
Whole cloves          – 4
Â
New Mexico dried chilies – 3-4

 Paprika                   – 1 tbsp

Salt                          – 1 tbsp

Ginger, ground        – 1 tsp

Turmeric                  – 1 tsp

Cayenne pepper        – 1/2 to 1 tsp

Nutmeg                    – 1/2 tsp

Method:

Dry roast all the ingredients until nice aroma comes out and allow it to cool.

Grind it into a fine powder store it in an airtight container.
