Malai Kofta

Malai Kofta

Ingredients:

For kofta:

Boiled potato             – 1  cup peeled and grated
Shredded paneer        – 1 cup
Shredded carrot          -1
frozen peas                 -3 tbsp.
green beans                 – 4 finely chopped
coriander powder        -1 tsp
cumin powder              -1/2 tsp
chilli powder                -1 tsp
corn flour                      – 1/4 cup
salt                                 – to taste
oil                                  – to deep fry

For curry:

onion                          -11/2 medium
cashews                      -8-10 whole
tomato                        -3
whole garam               -to temper
cumin seeds                 -1 tsp
ginger garlic paste       -11/2 tsp
coriander powder         -1 tbsp
cumin powder              -1/2 tbsp.
chilli powder                -11/2 tsp
heavy cream                 -1/4 -1/2 cup
salt                                -to taste
oil                                  -1 tbsp
cilantro                         -to garnish

Method:

For Koftas:

  • Micro wave finely chopped beans, peas and shredded carrots with 1/2 tsp of water for 3-4 minutes

  • Mash it with a spoon.(if u  do not use a  micro wave then boil it in water and squeeze out all the excess liquid)
  • In a bowl mix grated potato, paneer, mashed vegetables with salt, coriander powder, chilli powder, cumin powder and a tbsp. of corn flour.

  • Make it into equal sized koftas and roll it over on plate with corn flour and keep it aside.

  • Heat oil for frying.
  • Fry the koftas in oil until golden(these koftas are so delicate so handle carefully that it should not break)

For curry:

  • In a pan heat little oil and temper with whole garam
  • Now fry cashews and cubed onions in it until  golden.

  • Mix the ginger garlic paste and tomatoes to it.

  • After a minute put all the spice powders to it along with desired salt.

  • Cook until mushy and switch off the stove.

  • Allow it to cool down and blend it into a fine paste.
  • In  a kadai add little oil and temper with cumin seeds.

  • Now pour the blended mixture to it mix well and add a cup and 1/4 of water.

  • When it starts boiling add the fresh cream to it and cook for few more minutes.

  • Garnish with cilantro.
  • When ready to serve arrange the koftas in serving bowl and pour the  curry over it .

  • It tastes awesome with ghee Rice/Naan/chapathi
