Pancha dhania mixture
Ingredients:
dried peas              – 1  cup
chana dhal /bengal gram    – 200 g( 1 cup heaped)
thatta payaru/cow pea beans- 200 g(1 cup heaped)
kollu/horse gram          -200 g(1 cup heaped)
pasipayaru/green gram     -200 g(1 cup heaped)
curry leaves             – few
salt                   – to taste
chilli powder            – as per your taste
cumin powder            – 2 tsp coarsely ground
pepper powder           – to taste
chana dhal /bengal gram    – 200 g( 1 cup heaped)
thatta payaru/cow pea beans- 200 g(1 cup heaped)
kollu/horse gram          -200 g(1 cup heaped)
pasipayaru/green gram     -200 g(1 cup heaped)
curry leaves             – few
salt                   – to taste
chilli powder            – as per your taste
cumin powder            – 2 tsp coarsely ground
pepper powder           – to taste
Method:
- In a bowl soak dried peas in water for 48 hours.
- Soak ,thatta payaru/cow pea beans,kollu/horse gram ,pasipayaru/green gram in water separately in each bowl for 24 hours.
- Soak chana dhal/bengal gram for 12 hours in water separately
.
- Change water every 12 hours from all soaked ingredients.
- Drain everything separately and spread over a cloth and dry for at least an hour.
- In a pan heat oil for frying.
- Fry dried peas ,thatta payaru,chana dhal ,kollu ,pasipayaru one by one until the sizzling sound stops.
- Fry curry leaves separately for few seconds.
- In a mixing bowl add all the fried items  mix well along with salt, chili powder, pepper powder and cumin powder.
- Crunchy mixture is ready!! store it an air tight container.
