Fish Canapes

I am very glad  to share that I am once again chosen as one among the 25 bloggers, for the Saucy mama’s 2015 recipe contest .I received   6 delicious  sauce varieties from saucy mama


and we have to use any one sauce among it to create a recipe in any of the following Category…
–    Burger
–    Sandwich
–    Bacon (recipe must use bacon)
–    Seafood
–    Pasta
–    Fresh Recipe

I used the saucy mamas dill mustard sauce and lime chipotle sauce to create this interesting Fish canapes!! under seafood category…

 

Ingredients:

For Fish batter:

Halibut fish                                      -1 fillet
Egg                                                  – 1
heavy cream                                    –  2 tbsp
salt                                                   – to taste
Saucy mama’s Dill mustard             -11/2 tbsp
pepper                                              – to taste
butter                                                -1 tbsp

Fish Patties:

Potato                                                -1 small boiled & Peeled
halibut fish                                        -1/2 fillet
salt                                                     -to taste
saucy mamas lime chipotle marinade-1 tbsp
bread crumbs                                    -as needed
Egg                                                   -1
non stick spray                                  -for grilling
Others:
Lettuce                                           -3-4
Tomato                                          -1 sliced
Tooth pick                                     -to hold the canapes
Preparation time:10 min
Cooking Time     : 30 min

Method:

For Making Fish buns:
To make fish buns I used stove top muffin pan for getting Soft & elegant small sized buns. This product is easily available in amazon.
You can check the link below if you don’t have one and find few models.
  • Grind all the ingredients listed (including saucy mama’s dill mustard) under the For fish batter into a smooth puree. Add  water( if necessary) to make a consistency little thicker than the pancake batter.
  • Heat the stove top muffin pan and melt little butter into it.
  • Pour the fish batter into each mold  cook until it turns golden.
  • Turn to the other side and cook for 2 more minutes.
  • Remove the fish buns. Make the buns until the fish batter is done.
For Fish Patties:
  • Mash the  boiled potato in a bowl,Blend the halibut fillet for few seconds and add it to the mashed potatoes.
  • Add Saucy mama’s lime chipotle marinade and required salt.  Mix well
  • Make small circular patties.
  • Dip each potato into a bowl of beaten egg and coat well with bread crumbs.
  • Get the grill ready and grease it with oil.
  • Arrange the patties and grill it until well cooked on both sides.
  • Fish patties are ready.
Arrange the canapes:
  • Spread any of your choice of sauce over the top of a fish bun
  • Top it up with a slice of tomato.
  • Place a fish patty over it …followed with a lettuce. Top it up with another fish bun and use a tooth pick to hold everything together.
  • Fish Canapes are ready to serve.
