Welcome back to another delightful episode of Millet Magic. In today’s post, we’re diving into the world of crispy, nutritious goodness with our recipe for Super Crispy Ragi Dosa. This dish is not just a treat for your taste buds but also a powerhouse of nutrients.
Ragi, also known as finger millet, is a staple in many Indian households, especially for those who are health-conscious. It’s packed with calcium, essential for bone health, and is rich in fiber, which aids digestion. By incorporating ragi into your meals, you’re not just adding a unique flavor but also boosting your nutrient intake.
For this crispy delight, you’ll need:
Step 1: Preparation
Start by washing the ragi, split black gram, and fenugreek seeds thoroughly. Soak them in water for at least 5 hours. Soaking is crucial as it helps break down phytic acid in the millets, making the nutrients more bioavailable and easier to digest.
Step 2: Soaking Red Poha
About 10 minutes before the soaking time is up, wash and soak the red poha in water for 10 minutes. Red poha is a great addition to the batter, adding a nice texture and extra nutrition.
Step 3: Blending the Batter
After soaking, blend the ragi, split black gram, fenugreek seeds, and soaked red poha into a smooth batter. You can use a grinder or a mixer; I recommend using a reliable mixer like the Panasonic one I used, which blends everything smoothly in just two shifts. Once blended, add salt to taste and mix well.
Step 4: Fermentation
Let the batter ferment overnight or for at least 8 hours. Fermentation is key as it not only improves the texture and flavor but also enhances the nutritional value of the dosa.
Step 5: Cooking the Dosa
Once your batter is ready, heat a cast iron tawa (griddle) and pour a ladleful of batter onto it. Spread it evenly in a circular motion to form a thin dosa. Drizzle a little oil around the edges and cook until the underside is nicely roasted. Flip and cook the other side for a few more seconds until it’s crisp.
And there you have it—super crispy ragi dosa, hot and ready to serve! This dosa pairs beautifully with a spicy chutney or sambar, adding that extra punch to your meal
