Chicken sukka(dry)

Chicken sukka

 

Ingredients:

chicken               – 600g
oil                         –  2 tsp
onion                     – 11/2 finely chopped
shredded coconut – 1/2 cup
garlic                    – 6 -7 cloves
curry leaves         –   few
pepper                 –  1 tsp
 

 

For marination:

coriander powder          –   1 tbsp
cumin powder               –   1 tsp
chilli powder                 –   1 tsp
salt                                –  to taste
coconut powder           –    1 tsp
fennel powder             –    1/2 tsp
tamarind juice            –    1 tsp(real thick)
 

Method:

  • Marinate chicken with all spices given for marination for atleast 30 minutes
  • In mixer grind shredded coconut and garlic into a coarse paste(dont add even a bit of water)
  •  
  • In a pan heat 2 tsp of oil add chopped onion,curry leaves ,salt and pepper fry until brown and keep it aside
  •  
  • In a wide non stick pan (no oil is needed) put chicken pieces seperately touching the pan(dont put one over the other)
  •  
  • After 3 minutes turn chicken to the other side
  •  
  • After 2 minutes cover the pan with a lid
  • The chicken gets cooking with it own water
  • When its almost done add coarsely ground coconut-garlic paste
  •  
  • Stir well and allow it coat all over the chicken
  • Now add the fried onion too
    •  
  • Cook until the chicken gets well cooked
  • Serves      –       4
