Brinjal roast
Ingredients:
Brinjal                         –  1 big
salt                               – 11/4 tbsp
chilli powder               – 11/4 tbsp
coriander powder         –  1 tbsp
amchur powder            – 1/2 tsp
turmeric                       – 1/4 tsp
oil                                 – to shallow fry
Method:
- Cut brinjal into circles of even size
- Mix all the spices in a plate
- Heat oil in a pan
- Put the brinjal slices on the plate to coat both sides with the spices
- Shallow fry it on both sides
- Serve with Rice and dhal or rasam or yogurt
