Tara root fry/Seppankizhangu varuval

Tara root is a root vegetable which is rich in dietary fiber and has a very nutty flavor.This tara root fry goes as a wonderful side dish with combo of Rice & Sambar/Rasam/Curd/Tamarind based curry.


Ingredients:

Tara root/Cheppankilangu    -7
Mustard seeds                       -1/2 tsp
green chili                             -1 chopped
hing/asafoetida                      -pinch
sambar powder                     -1 tsp
chili powder                         -1 tsp
Rice flour                             -1 tbsp
Gram flour/Besan                 -1 tbsp
salt                                        -to taste
oil                                         -2 tbsp



Preparation time:5 min
Cooking time    :20 min


Method:

  • In a pressure cooker cook washed tara root/cheppankilangu with water for a whistle.(do not over cook)

  • Once the pressure goes off open the cooker and drain off the water.Peel the skin off and cut into roundels.
  • In a wide bottomed  pan heat oil and temper with mustard seeds,green chili,turmeric,hing.

  • Add the tara root/cheppakilangu roundels,slat,chili powder and sambar powder.

  • After frying for 5 minutes sprinkle rice flour and gram flour to spread all over the tara root.


  • Cook for another 3-5 minutes untill well roasted.

  • Tararoot/Seppankilangu fry is ready to serve.
