This simple fish roast recipe brings out the best flavors with a perfectly spiced marinade and a crispy outer layer!

Step 1: Prepping the Fish

• Make 2-3 slits on both sides using my Kai Knife—this helps the marinade soak in deeper.

Step 2: Flavor-Packed Marinade 🌶️

In a bowl, mix:
✅ 1 tbsp ginger-garlic paste
✅ 1 ½ tsp Kashmiri chili powder (for rich color)
✅ Salt to taste
✅ A pinch of turmeric (for antibacterial properties)
✅ 1 ½ tsp regular chili powder (for spice)
✅ 1 heaped tsp fennel powder (Secret ingredient for extra aroma & flavor!)
✅ A handful of chopped curry leaves (for an authentic touch)
✅ 1 tbsp each of rice flour, corn flour & gram flour (for crispy binding)

Coat the fish well with this flavorful marinade and let it rest for a few minutes.
