1. Make the Marinade:
In a bowl, combine soy sauce, fish sauce, lemon juice, chili flakes, ginger garlic paste, cilantro, chili powder, brown sugar, and salt. Mix well until you have a smooth, flavorful marinade.
2. Marinate the Chicken:
Pour the marinade over the chicken. Massage the marinade into the chicken so each piece is well-coated. Let it rest for a minimum of 1 hour in the fridge, or overnight for best flavor.
3. Bake the Chicken:
Preheat your oven at 200°C for 10 minutes. Arrange the chicken pieces on a baking tray. Bake for 40 minutes total, flipping the chicken after 20 minutes to ensure even cooking and juicy texture on all sides.
4. Optional Glaze:
To enhance flavor and give the chicken a glossy finish, add the leftover marinade to a pan with ½ cup water. Simmer and add a slurry made of 1.5 tsp corn flour + a little water. Stir until it thickens and drizzle over the baked chicken.
