  • 1 small tomato

Take ½ kg of country chicken in a bowl. Add ¼ cup of yogurt and the ground masala paste. Mix well until the chicken is fully coated. Let it rest for at least 30 minutes (or overnight for better flavor).

  1. Heat 3 tbsp sesame oil in a pressure cooker.
  2. Add a handful of curry leaves and let them splutter.
  3. Add ½ cup sliced shallots and sauté until soft and pink.
  4. Place the marinated chicken over the onions and let it cook uncovered for 5 minutes, stirring occasionally.
  5. Pour ½ cup of water, mix well, and close the lid.
  6. Pressure cook for 3 whistles on medium flame.
  7. Lower the flame and simmer for 15-20 minutes, then switch off.

Step 4: Adjust the Consistency

  • If using broiler chicken, you can switch off after 3 whistles as it cooks faster.
  • Once the pressure is released, open the cooker and check the consistency.
  • If the gravy is too thin, cook uncovered for 5 more minutes until it thickens to your preference.
