Sorghum Millet/Chola Dosai

Chola Dosai, made fromCholam (Sorghum millet), is not only delicious but also packed with essential nutrients. This dosai is a perfect blend of taste and health, making it an ideal meal for any time of the day. Let’s walk through the steps to prepare this delightful dish.

Ingredients:

  • 1 cup of Sorghum Millet – rich in fiber and antioxidants
  • 1/2 cup of idli rice – provides energy and essential nutrients
  • 1/4 cup of urad dal – packed with protein and minerals
  • 1/4 teaspoon of fenugreek seeds – known for their digestive benefits
  • Salt to taste

Instructions:

1. Soaking the Ingredients:

  • Start by taking 1 cup of Sorghum Millet, 1/2 cup of idli rice, 1/4 cup of urad dal, and 1/4 teaspoon of fenugreek seeds in a bowl.
  • Wash them thoroughly under running water to remove any impurities.
  • Soak them in enough water for about 5 hours.

2. Blending the Ingredients:

  • After soaking, drain the water and transfer the soaked ingredients into a mixer or grinder.
  • Blend them together until you get a smooth batter with a pouring consistency.

3. Mixing the Batter:

  • Pour the batter into a large bowl.
  • Add adequate salt and mix well with your hands. This step ensures even distribution of salt and aids in the fermentation process.

4. Fermenting the Batter:

  • Cover the bowl with a lid and allow the batter to ferment for about 8-12 hours, depending on the room temperature.
  • The batter should rise and become slightly bubbly.

5. Cooking the Dosai:

  • Heat a tawa (griddle) on medium flame. Grease it lightly with oil.
  • Pour a scoop of batter onto the hot tawa and spread it evenly in a circular motion to form a thin dosai.
  • Drizzle some oil around the edges and cook until it turns golden brown.
  • Flip the dosai and cook the other side until it’s crispy.

6. Serving:

  • Once cooked, transfer the dosai to a plate.
  • Serve hot with your favorite chutney or dip. Coconut chutney and sambar are popular accompaniments.
